  • 2 Tbs olive oil
  • 1 Tbs fresh lemon juice
  • splash of balsamic vinegar (to taste)
  • some sliced red onion
  • salt/pepper
  • 2 oz chevre
  • 1 oz feta
  • 1/3 cup cream
  • lemon zest from half a lemon
  • 1 tsp honey
  • 1 tomato 
  • 2 peaches
  • 1 oz basil – some leaves whole, some chopped
  • garnish of choice


  1. First make a simple vinaigrette by combining the olive oil, lemon juice, balsamic, onion and salt/pepper.  Set aside. 
  2. Put the cheeses, cream, zest and honey in a food processor and whiz until creamy and spreadable.
  3. Slice the peaches and tomato and add them to the vinaigrette.  
  4. Choose a nice serving platter. Spread the cheese concoction on it, decorate with whole basil leaves and then arrange the peaches and tomatoes on top of it. Sprinkle the chopped basil on top. Garnish with summer flowers or more basil and serve.
