Baked Oatmeal

January is National Oatmeal Month so it's the perfect time to try a delicous new recipe that is packed with nutrients and fresh local food, and is easy to make! 

Ingredients

  • ●  1 3/4 cups milk

  • ●  2 large eggs

  • ●  1/2 cup pure maple syrup

  • ●  1/4 cup unsalted butter, melted and slightly cooled

  • ●  1/4 cup unsweetened applesauce

  • ●  3 cups old-fashioned oats (whole)

  • ●  1 tsp baking powder

  • ●  2 tsp ground cinnamon

  • ●  1 tsp pure vanilla extract

  • ●  1/4 tsp salt

  • ●  1 cup apples, diced

  • ●  1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F. Spray a 9×9” or 11×7” baking pan with nonstick spray.
  2. Whisk all of the ingredients together in a large bowl. Pour into the baking pan. Top with chopped walnuts.
  3. Bake for 35 minutes or until the center appears almost set for a softer, gooier consistency. If you prefer your Baked Oatmeal drier and more solid, bake until the center has set.
  4. Cool for 5 minutes before serving. Slice and serve with yogurt or fruit, if desired. Leftovers can be refrigerated for up to a week.
  5. You can add berries or other fruit to the recipe to add some sweet, fruity flavor. Alternatively, top each slice with some fruit after your Baked Oatmeal comes out of the oven.
