It's officially blueberry season which means you can find the freshest blueberries from local farmers in your community on Market Wagon! Although delicious on their own, here is a family recipe for homemade Blueberry Cake that pairs perfectly with local blueberries.
Cake Ingredients:
- 2 c flour
- 2 tsp baking powder
- ½ tsp salt
- ¼ c butter
- ¾ c sugar
- ½ c milk
- 1 egg
- 2 c blueberries
- 8” square pan
Cake Topping Ingredients:
- ½ c sugar
- ⅓ c flour
- 1 tsp cinnamon
- ¼ c butter
Instructions:
- Set oven to 350F.
- Combine in a small bowl: flour, baking powder, and salt.
- Cream butter and sugar in a mixer. Add milk and egg until smooth.
- Add dry ingredients and blueberries.
- Spread in a greased and floured pan.
- In a separate bowl, mix dry cake topping ingredients. Add butter.
- Sprinkle topping over cake in pan.
- Bake for 45-60 min.
