Butternut Bacon Farro on Arugula

Perfect for the fall season, this recipe created by Ready set Dinner, includes a variety of delicious elements from in-season butternut squash, farm-fresh bacon, greens, and grains to make a delicious dish the whole family will love. 

Ingredients (4 servings):

  • 7.1 oz farro
  • 16.9 fl oz vegetable broth
  • 7.1 oz bacon
  • 4 1/4 cup, cubes (1.3 lb) butternut squash
  • 10 cup arugula 
  • 1/2 tsp ground nutmeg
  • 2.5 fl oz olive oil
  • 3 Tbsp vinegar
  • 1/2 tsp salt
  • 2 dash pepper 

Instructions

  1. Add farro and broth into a pot and bring to a boil. Reduce heat to medium. Cover pot and let simmer for about 25 minutes until liquid is absorbed and farro is softened. (If necessary add a few tablespoons of water.)
  2. Peel the butternut squash and cut into larger cubes. Cut bacon into slices.

  3. Put the bacon into a pan on medium-high heat and cook for 1-2 minutes before bacon gets brown. 

  4. Reduce heat to medium, add butternut squash and nutmeg. Mix well, cover the pan and cook for 7-8 minutes until the squash is tender. Stir occasionally. 

  5. Put the squash and bacon mix into a paper towel to soak up the grease.

  6. Pour olive oil, vinegar, salt & pepper into a glass and whisk with a fork until it's well combined. 

  7. Put the arugula on your plates or in a bowl, add the farro and squash-bacon mix, and pour vinaigrette over it.
