Fork Smashed Blonde Chickpea Salad

In honor of National Bean Day we are sharing a delcious recipe created by 8 Tracks Foods. Inspired by founder Maggie Seng Sadowsky's favorite tuna salad recipe, this is vegan, gluten-free, and only takes 10 minutes to create! 

Ingredients:

Instructions: 

  • Mash chickpeas to rough consistency (you can remove skins or blend into the mix)

           

  • Blend remining ingredients
  • Add salt to taste 
  • Spoon into lettuce boat or pumpernickel bread and enjoy! 

Food Science Tip: Save the aquafaba (bean water from draining). It works as an egg replaced in some recipes!
