North Country Charcuterie Hoguera Chili

Cold weather and football seaon means it's the perfect time to try a new chili recipe.  Hoguera Spreadable Chorizo from North Country Charcuterie is made with hot paprika, chipotle, cayenne pepper, and pork. It adds intriguing smokiness and residual heat to this chili recipe created by North Country Charcuterie

Yields: Eight bowls of chili

Instructions:

1. Heat oil in Dutch Oven or large pot. Sauté onion and peppers until onions are translucent. Add tomatoes, corn and broth. Season with cumin, salt and pepper.
Bring to boil, reduce heat and simmer for 20-30 minutes or until mixture begins to thicken.


2. Remove the Hoguera from its casing. Break up the chub of Hoguera with a fork. In a separate pan, sauté the Hoguera until it is darker brown. Add to the pot of vegetables. Stir well.


3. Let chili simmer for another 20 minutes. Add 1/4 cup chocolate chips! Let chips melt well, stir again to incorporate chocolate flavor. If you make this chili in advance, it will have time for the flavors to meld. Serve with corn bread and toppings like avocado; mild grated white cheese; cilantro or sour cream.
