Peach Salsa

This salsa is great as an appetizer with chips or over a grilled pork chop. It can be eaten right away, but the flavor is better if you let it sit in the refrigerator 3-4 hours before eating. This is good in the refrigerator for up to 5 days after it is made. 

Serves: 6-8

Ingredients: 

Instructions:

  1. Dice tomatoes, bell pepper, peaches, and red onion all the same size and place into a bowl. Note: the sizes you choose to dice will vary depending on how you prefer your salsa. We chose a small dice, but any size works.
  2. Seed and finely dice the jalapeno and serrano peppers. Add to the bowl. Note: if you can't find a serrano pepper you can use two jalapenos.
  3. Finely chop approximately 1/4 bundle of fresh cilantro. Use as much cilantro as you want or you can omit this ingredient if you prefer.
  4. Stir in lime juice, salt, and pepper. You can add more based on your preference.
