This salsa is great as an appetizer with chips or over a grilled pork chop. It can be eaten right away, but the flavor is better if you let it sit in the refrigerator 3-4 hours before eating. This is good in the refrigerator for up to 5 days after it is made.
- Dice tomatoes, bell pepper, peaches, and red onion all the same size and place into a bowl. Note: the sizes you choose to dice will vary depending on how you prefer your salsa. We chose a small dice, but any size works.
- Seed and finely dice the jalapeno and serrano peppers. Add to the bowl. Note: if you can't find a serrano pepper you can use two jalapenos.
- Finely chop approximately 1/4 bundle of fresh cilantro. Use as much cilantro as you want or you can omit this ingredient if you prefer.
- Stir in lime juice, salt, and pepper. You can add more based on your preference.
