You can use any root vegetables from Market Wagon for this recipe, but our favorites are sweet potatoes, onions, small waxy potatoes, parsnip, and rutabaga. You can even add winter squash to the tray.
Ingredients (Serving Size: 6-8):
1. Preheat oven to 425F
2. Wash and peel all vegetables and cut them into even-sized pieces, approximately 1” in size.
3. Put all ingredients into a large bowl, drizzle with olive oil and stir together
4. Pour onto a parchment paper-lined baking sheet
5. Roast for 45-50 minutes, until the vegetables are tender, and the edges are browned
6. Serve and enjoy!
