Sausage & Kale Soup

Ingredients (Serves 6):

Instructions:

  1. Break up the Italian sausage and cook in a small stockpot or large saucepan big enough to fit all the liquid we will be using in the recipe.

  2. Add diced onion and sauté until the onion is soft.

  3. Once the onion is soft, add in the chopped garlic and cook just until you can smell it. This will take 1-2 minutes. Be careful not to burn the garlic because it will ruin the flavor of the soup.

  4. Next, add in the 8 cups of chicken broth, turn the stove on high heat, and bring to a boil.

  5. Once the stock is boiling, reduce the heat to medium and add in the potatoes. Simmer with the lid on for 15-20 minutes, or until the potatoes are soft and cooked through.

  6. Turn off the heat and add in the kale. The temperature of the soup will cook the kale.*

  7. Add salt and pepper to taste.

*If you’d like to add cannellini beans add them before the kale and let them simmer for approximately 5 minutes to heat through.

This soup can be stored in the refrigerator for 5 days, or frozen for up to 3 months.
