A2/A2 Whole, Non-homogenized milk

Our A2/A2 milk comes from cows that have been tested to produce milk that only contains the A2/A2 beta-casein protein. Many with milk sensitivities can drink this milk with no issues. Our milk is bottled the same day it comes from the cow. Because it is non-homogenized, the cream rises to the top, so if you don't want to skim the cream off the top for your coffee or other purposes, please be sure to SHAKE WELL to distribute the cream through the milk to enjoy the rich, creamy taste of milk as nature intended!USA / Ohio / Logan County

Q: Is your milk from a Guernsey and/or Jersey herd? I grew up on a Guernsey farm and tend to prefer the richer milk - I know they are often the A2 producers...

A: 'We milk mostly Holsteins - one Jersey:) While you are correct that Guernseys and Jerseys are known for richer milk, over the years we have bred our cows with an emphasis on butterfat, protein, and the A2 beta casein. Q: I love your milk. I did not like milk before, but I do now. You told me ho to freeze the milk. I put in the freezer than thawd in in the frige. It is GREAT. A: 'No, we only offer whole milk and A2 milk at this time. We do not want to alter the milk in any way, and new dietary information suggests that naturally occurring fats are not as bad as people were previously led to believe. '

A: 'No, our milk is not organic, but we do feed our cows non- GMO feed, we do not use rBST, and our cows love to spend their time out in the pasture:) Our cows all have names and unique personalities - which is what makes dairy farming fun:) '

A: I am sorry to hear you are having trouble with that. This would be a question for Market Wagon, though. They distribute and do the billing for all the products they offer on their website. Q: Do you have any milk for diabetics

A: We only sell whole milk. That said, our A2 milk may be an option, as some studies have shown it does not cause diabetes in test subjects. I am sorry I cannot be of more help!

A: I'm not sure if this will answer your question or not, but when we test our milk from our bulk tank, it tests at 3.17% protein. I hope that helps!

Q: It’s not as creamy as before. What has changed? It was difficult to get the milk from the bottle as there used to be thick layer of heavy cream on top. Now it’s like water.

A: Are you referring to milk that you got today? If so, the milk was just bottled and the cream probably hasn’t had time to completely separate. If you leave it sit for a day or two, the cream will settle out more. The taste should be the same as your previous jug after it was shaken. I hope that helps!

A: No, we do not ultra pasteurize our milk. It works great for yogurt!

Q: Are your cows 100% grass fed? If not, how do you supplement their diets?

A: They are not 100% grass fed. They do have pasture access when the weather is nice but on days that it is not fit to pasture we feed them a ration that our nutritionist puts together for the cows. The diet is mostly forages, that we harvest and dry or ferment to store for when the cows are in the barn. The diet also has a small amount of non-gmo ground corn, soybeans, and the minerals and vitamins the cows need.

Q: I know this is non-homogenized, but is it also unpasteurized? And if not, do you offer unpasteurized whole milk?

A: Our milk is pasteurized using a high temperature/ short time pasteurizer, which quickly heats the milk for 15 seconds then cools it immediately. It is not legal in Ohio to sell raw milk, but in more than one blind taste test people find our milk tastes just like raw milk. We hope you will give it a try! Thank you for your question.

Q: Do you ever plan to move these to a non-plastic container? Love the milk - but wish it was a different container!

A: We do not plan on switching to glass bottles. We did look into it, but the cost of bottles and the labor required to wash them is too much for us. My husband and I milk our 70 cows, bottle the milk, and sell/deliver the milk ourselves so we just cannot add any more to our workload at this time. Q: Is this different that the Whole Milk sold by the same vendor?

A: Yes, this is different than the whole milk. The A2/A2 milk contains only A2 beta-casein, while the whole milk has both A1 and A2 beta-caseins. Many who have lactose sensitivities have found that the A2 milk is easier for them to digest, causing less bloating. Sometimes, though, the whole milk we provide is easier to digest because we do not homogenize our milk. Thank you for your question!

A: Simply put, cows can produce two kinds of casein protein...A1 or A2. Genetics determine which version they produce. Research shows that the A2 protein is more easily digestible which is why A2 milk has become something that consumers are interested in trying. There are several books and research articles available on the subject if you are interested in a more detailed explanation.

Q: Do you ever plan to sell containers of cream? I want to make clotted cream, and ultra-pasteurized does not work well.

A: Good morning! At this point in time, we do not have any plans to separate and package cream. Just to clarify, though, Ultra-pasteurized milk is heated to 275 degrees....we use an HTST pasteurizer which heats the milk to 161 degrees. I hope that helps! Thank you for your interest:)
