Inspired by our family trip to Thailand, many years ago, with help from our friends at Fetty's Street Food. Ohio raised Berkshire Pork mixed with Pork and several other fun Southeast Asian spices Red Curry Paste, Lemongrass, Kaffier Lime, Galangal, Lime Leaf, Turmeric and. We like forming it around skewers and tossing on the grill! (Like in the photo.) It's great by itself, added to stir-fry or tossed in a fried rice dish.     Q: Is this gluten free now? I saw previous questions about it. Thank you. I'm excited to try this sausage. I'm half Thai and love Thai foods.

    A: Thanks for your question! Yes, our Northen Thai Style Sai Ua Sausage is now gluten free. We switched from normal soy sauce to Gluten Free Tamari Soy Sauce. Here is a complete list of ingredients: Pork, Tamari Soy Sauce (water, soybeans, salt, sugar), Red Curry Paste (Dried Chilli Pepper, Garlic, Shallot, Salt, Lemongrass, Sugar, Kaffier Lime, Galangal, Spices, Citric Acid), Sugar, Lime Leaf, Turmeric.     Q: We usually get Kikkoman or San-J, but there may be other gluten-free brands out there. Thank you for considering this.

    Q: This sounds amazing! Unfortunately one of our family members cannot have gluten. Would you consider using gluten-free soy sauce in this recipe in the future?

    A: Thank you for your message! We can look at doing this in the future. We have a decent inventory of our Sai Ua right now, so it will likely be a couple of weeks before we make another batch. Do you have a favorite gluten-free soy sauce? Maybe we can buy it in bulk? It will depend on how expensive the gluten-free soy sauce is compared to the one we currently use. Stay tuned!

    format_quoteAbsolutely delicious! I was not familiar with this sausage. I made it into patties, and served with a salad of cilantro micro greens, mini peppers, cucumber, scallions, and a little tomato, lightly dressed with lime juice and olive oil. Side of rice. So yum!format_quote

    format_quoteI made a noodle dish - fried up the sausage with a bag of Asian salad greens from ALDI then tossed in a peanut sauce with rice noodles. We have some sausage left that I will fry up with some eggs and maybe some tomato for an egg scramble. WIll be ordering more!format_quote

    format_quoteThis is perfect for my lettuce wraps! There are so many other possibilities, too. The seasoning is perfect and Thai-savory. When it is close to the end of cooking, I stir in grated carrot, chopped water chestnuts, and green onion, just enough to warm but not to soften. Then, I spoon into the lettuce and sprinkle a little lemon grass on top. Quick, healthful, and tasty :-)format_quote
