Wender Farms is a Knoxville-based Microgreens Farm. We are an indoor, year-round farm 100% focused on growing microgreens for the Knoxville area.
We eat too much sugar and processed food these days. We should all eat more fruits and vegetables and less of the processed, sugary stuff. That's where microgreens come in.
An ounce of microgreens delivers the nutrition of one and half pounds of mature broccoli.
With Microgreens being so nutritional-dense, adding even a little bit of microgreens to your diet is a great way to improve your nutrition. Microgreens are very young versions of plants harvested 14 to 21 days after planting. This is a very vigorous time of growth for the plant and it is producing an amazing amount of nutrients to compete for sunlight and to thrive against the oxidizing affects from things such as the sun's UV light. When we consume microgreens raw with are fueling our bodies with all the vitamins, minerals, phytochemicals, and antioxidants that we need for a more healthy life.
Many vegetables can be grown as microgreens. We grow broccoli, peas, kale, sunflower, radish, mustard, fenugreek, alfalfa, carrot, borage, arugula. All of these plants are harvested at the "microgreens stage" so that they are packed with maximum nutrition. And, they taste amazing. The flavor profile is like the mature plant but often with wider, more exciting flavor profile. For example, broccoli microgreens do taste like broccoli but they also have subtle notes of onion and garlic. The radish microgreens start out smooth and creamy when you first bite into them and the spicy radish kick only shows up on the back of your palate.
How to Eat Microgreens
Many people start out by sprinkling microgreens on their mature veggie salads
Mix microgreens into smoothies. Sunflower micros are packed with protein and add a nutty taste in place of peanut butter
Garnish meat dishes with microgreens
Next, after you see how delicious microgreens are you may move to a salad 100% made from microgreens with a little Extra Virgin Olive Oil (EVOO)
Finally, lots of healthy eaters in East Tennessee eat the microgreens straight from the box in the fridge - that are that good and that good for you
