SoKno Sourdough is a woman-owned microbakery based in South Knoxville specializing in sourdough-only offerings. Every product is made with sourdough starter that is about 6 years old (instead of commercial yeast) and fermented between 8 and 24 hours. This long fermentation time helps to ease digestion of the bread items and contributes to bolder flavor of the goods. Items available include loaves, bagels, English muffins, and focaccia. All items begin with flour, water, and salt. We use organic ingredients as much as possible and source locally to the best of our ability. Items are packaged with the environment in mind, wrapped in brown paper that can be composted or will break down easily in a landfill.
